It’s going to be a delicious Saturday morning when you kick off the day with a healthy start! This delicious parfait is filled with fruity, creamy and crunchy goodness that is quick to make and will be a highlight of your morning! For your parfait, you can use a variety of cereal or granola and fruit. This parfait, is nectarine and blackberry which together it is FULL of vitamins and antioxidants.
To make: About 7 minutes and makes 4 servings
1 cup of diced nectarines (from 1 large nectarine)
1 1/2 tablespoons of honey
1 tablespoon of fresh lemon juice
2 cups of whole-grain puffed cereal (or a different cereal of your choice, I personally like using a granola based cereal)
1 cup of 1% lowfat cottage cheese
3/4 cup of fresh blackberries
1 1/4 cup of vanilla low-fat yogurt
1.Combine the first 3 ingredients in a small bowl; then let stand for about 5 minutes
2. Place 1/4 cup of the cereal in 4 parfait glasses. Then top each glass with 1/4 cup of the cottage cheese, the 3 tablespoons of blackberries, 1/4 cup of low-fat yogurt, 1/4 cup of the nectarine mixture previously combined and 1 tablespoon of the yogurt.
