Hello everyone!! Happy Monday, I am back with another recipe blog that has me energized and ready to kick it up a notch with the spices and turn up the flame in the kitchen. Today is a great day to have a little bit of heat in your food with a delicious and healthy meal that is ready to be enjoyed at a kitchen nearest you. Today’s recipe is Spicy Beef Stir Fry! Let’s get started!!
The preparation of this meal is 20 minutes with a total of 20 minutes of cooking time and serves about 4.
1 tablespoon of peanut oil **(or olive oil if you have a peanut allergy!)**
1 pound of lean tri-tip steak, trimmed and sliced thinly
Vegetable cooking spray
6 tablespoons of oyster sauce
1/2 cup of water
3/8 teaspoon of crushed red pepper
1 12 oz package of fresh fajita vegetables, coarsely chopped
1 teaspoon of peeled and grated fresh ginger
2 minced garlic cloves
2 cups of broccoli florets (12oz or so)
1 cup of snow peas
1 8.8oz pouch of microwaveable whole-grain brown rice *(or you can cook your rice stovetop if you prefer!)
- Heat 1 teaspoon of the oil in a large nonstick skillet over a medium-high heat. Coat the beef with the cooking spray. Add half of the beef to the skillet. Cook, making sure to stir often until browned. This takes about 2 minutes. Remove the beef from the skillet and set it aside for now. Repeat this same procedure with the remaining beef using 1 teaspoon of oil.
- Combine the oyster sauce, 1/2 cup of water and crushed red pepper in a small bowl.
- Wipe down the skillet so that it is clean and heat the remaining 1 teaspoon of oil in the skillet over medium-high heat. Coat the fajita vegetables with cooking spray and add them with the garlic and ginger to the skillet. Stir often for about 2 minutes. Add the broccoli and snow peas and stir often until they are tender-crisp for about 3 minutes. Adding the beef and oyster sauce mixture cook until slightly thick for about 1 minute.
- Heat or cook the brown rice in accordance with the cooking instructions and serve the beef mixture over the rice.
