Grilled Chicken with Spinach and Melted Mozzarella

If you like those fancy dishes that look like they took hours to create, look no further. This is a delicous, quick and easy way to bring fancy right to your kitchen! This recipe is Grilled Chicken with Spinach and Melted Mozzarella.

Servings: 6   Serving Size: 1 cutlet,spinach,cheese


3 large chicken breasts sliced in half lengthwise to make 6 cutlets

Salt and Pepper

1 tablespoon of olive oil

3 cloves of crushed garlic

10 oz of shredded mozzarella

1 roasted red pepper sliced in strips

Cooking Spray

To make:

Season the chicken with salt and pepper. Lightly spray a grill with oil or grill outside on a gas grill. Cook the chicken on the grill until no longer pink, being careful not to overcook or you’ll end up having dry chicken and we do not want that!

In the meantime, heat the saute pan on a medium heat. Add oil and garlic, saute for one minute, add spinach, salt and pepper. Cook until heated through

When chicken is done, remove from grill and place on a platter. Divide the spinach evenly between the 6 pieces and place on top. Sprinkle each with 1/2 oz mozzarella, then slices of roasted pepper.

Place back on grill with indirect heat until melted.

This is such a delicious dinner, add a garden salad and a glass of iced tea and ENJOY!!
