Sauteed Vegetable Pitas

Hello Everyone!

Ever been on one of those healthy kicks? I have, and I have an amazing recipe that is so delicious and extremely healthy!!

Today, it is Sauteed Vegetable Pitas

Preparation takes about 15 minutes

Total Cooking Time is 15 minutes

*Note: This is optional, but if you like hummus you can find prepared hummus in the deli section in your local grocery store!


1 teaspoon of olive oil

1 cup of sliced red bell pepper (using 1 bell pepper)

1 cup of sliced red onion( using 1 red onion)

1 zucchini, halved lengthwise and sliced about 1 cup

1 yellow squash, halved lengthwise and sliced about 1 cup

1/4 teaspoon of table salt

1/4 teaspoon black pepper

1/2 cup prepared hummus

2  6-inch whole wheat pitas, cut in half

3oz of feta cheese, crumbled about 3/4 cup

1 cup fresh baby spinach

1/2 cup of mushrooms *(strictly optional!)

To create:

  1. Heat the oil in a large skillet over medium-high heat. Add the bell pepper and the next 3 ingredients(the onion, zucchini, squash and the optional mushrooms); cook, stirring occasionally until tender. This takes about 8 minutes. Remove from heat and stir in salt and pepper.
  2.  Spoon 2 tablespoons of the hummus into each pita half. Fill each pita half with about 1/2 cup of the vegetable mixture, about 3 tablespoons of feta and 1/4 cup of spinach.
